Carbonara is a pasta dish made with guanciale, egg, pepper and cheese. It is one of the classics of Roman cuisine.

I prefer to use mussel pasta or those that leave a lot of sauce on. 🙂 For two people about 250g.

Then an egg yolk is mixed with a cup of cream and a good handful of parmesan, I then add a good dash of milk and round off with pepper and salt.

Fry the bacon or ham in the pan, add the mixture and bring to the boil. Add the noodles and simmer until the mixture has the desired consistency.
