<li>50 g Couscous</li>



<li>200 ml Gemüsebrühe</li>



<li>1 Zwiebel</li>



<li>1 Knoblauchzehe</li>



<li>1 Tomate</li>



<li>1 EL Olivenöl</li>



<li>500 g Zucchini (2 mittelgroße Zucchini)</li>



<li>1 EL Pinienkerne</li>



<li>1 TL Oregano</li>



<li>1 TL Zitronensaft</li>



<li>1 EL Tomatenmark</li>



<li>1 EL Petersilie (gehackt)</li>



<li>Salz und Pfeffer</li>



<li>80 g Feta</li>



<li>20 g Parmesan (gerieben)</li>
</ul>

<h3 class="wp-block-heading">Zubereitung:</h3>



<ol class="wp-block-list">
<li><strong>Couscous vorbereiten:</strong><br>Backofen auf 200 °C vorheizen. Couscous in eine Schüssel geben und mit kochender Gemüsebrühe übergießen. Abdecken und 10 Minuten quellen lassen. Anschließend mit einer Gabel auflockern.</li>



<li><strong>Zutaten vorbereiten:</strong><br>Zwiebel und Knoblauch schälen und fein würfeln. Tomate ebenfalls würfeln. Zucchini der Länge nach halbieren und mit einem Löffel aushöhlen. Das ausgehöhlte Zucchinifleisch fein hacken und beiseitelegen. Die Zucchinihälften leicht salzen und in eine geölte Auflaufform setzen.</li>



<li><strong>Füllung zubereiten:</strong><br>Olivenöl in einer Pfanne erhitzen. Zwiebeln und Knoblauch glasig dünsten. Tomaten, gehacktes Zucchinifleisch, Pinienkerne und Oregano hinzufügen und kurz mitdünsten. Den vorbereiteten Couscous unterheben. Zitronensaft, Tomatenmark, Petersilie und Feta einrühren. Mit Salz und Pfeffer abschmecken.</li>



<li><strong>Zucchini füllen:</strong><br>Die Couscous-Mischung gleichmäßig in die Zucchinihälften füllen. Parmesan darüber streuen.</li>



<li><strong>Backen:</strong><br>Die gefüllten Zucchini im vorgeheizten Ofen etwa 15–20 Minuten garen, bis sie weich sind und der Käse leicht goldbraun ist.</li>
